The artichoke is a plant typical of mild, warm and dry climate, it is sensitive to frost and standing water. Artichoke adapts well to different soil type, prefers those silicon-clay-limestone, deep and of a medium texture. Often the artichoke are implanted intercropped between rows of orchards and olive groves. The implant of artichoke field is made in summer or autumn using the sprouts that grow at the base of plants. The collection is of two types, the one that begins around early October and the one that ends in late June.
