Eggplant

The eggplant is fit for hig temperature and is sensitive to thermal shock which might cause the stop of its development. Is adapted fot melted land and with a medium mixture, rich of organic substances. The eggplant combines well with salad, fennel and cabbage. The sowing is in January-February in the south of Italy and in February-March in the north of Italy, the collection is before the maturation when the flesh is hard and the seeds are not so evidents.
